Haigh's Farm Shop, based in Mirfield, West Yorkshire, is open seven days a week supplying meat, sausage, bacon, poultry, bread, and confectionery. In addition, pies are cooked in a Tom Chandley five-deck oven which has been in operation on the premises for nearly 20 years.
This longevity and reliability persuaded Haigh's to invest in an additional five-deck oven from Tom Chandley which gives a more consistent and even bake resulting in a better bake-off, claims owner Richard Haigh. The five decks can accommodate up to 15 trays of pies or bread at a time.
Each deck of the new stainless steel Compacta oven has a ceramic baking heat plate and independently-controlled top and bottom heat.
In addition to pies and bread produced, the oven can handle pizza, pastries, and confectionery.
Optional extras include glass doors, proving cabinets, up to 48 tray sizes, timers, racked bases, and a choice of controls from manual to computer.
