Middlesex-based supplier Ambit International is introducing two machines to the UK bakery market, following their successful launch earlier this year at the Europain show in Paris.
The first is the V500 dough divider, designed to minimise dividing oil consumption by 40-60% using a special patented dividing unit, controlled via an integrated oil management system.
The system aims to cut the thousands of pounds that modern bakeries waste on oil for conventional dividers. It also eliminates hygiene and health and safety issues, including slippery floors and excessive cleaning.
Manufactured by Werner & Pfleiderer Haton, a division of the Horstmann Group, the V500 is capable of dealing with and adapting to a variety of dough, including dough with long floor times and high water contents.
It is equipped with a double functioning hydraulic unit, the Voluminator, which stops the dough extruding back into the hopper when the machine releases pressure at the start of a new cycle. It has a small footprint and can be used with almost any type of dough.
Complementary to the V500 is the President range of spiral mixers made by Kemper. These are equipped with a hydraulic fork locking system that ensures greater stability of mixing bowl to drive mechanism. They include, as standard, a double-wheel friction drive for more consistent mixing results and reduced bowl slippage.
As an option, the mixers can also be fitted with a PT100 temperature sensor that monitors the dough temperature throughout the mixing process.
President mixers are equipped with stainless steel flour dust prevention covers and a built-in motor protector with bowl scraper.
