Another firm keen to meet manufacturers' clean label requirements is UK ingredients supplier Zeelandia, which has launched a hydrogenated fat-free version of its Zedomals Liquid.

An enzyme-based functional product, Zedomals Liquid is used to enhance the quality of baked fermented products by adding moisture and softness. It can be used in conjunction with bread improvers to produce soft and elastic doughs with good handling characteristics, says the company.

Zeelandia has also just launched Exakt Soft 10% MXI - a premium soft roll concentrate suitable for premium goods. It is already proving popular with clients, says the firm, as it creates a softer and more process-tolerant product.

The ingredient ensures a white crumb colour and even texture, claims Zeelandia. It also allows for maximum boldness and an optimum shape and is available in 10kg plastic bags.

The MXI process underpinning the ingredient is a new technology that allows direct control of individual enzymes in order to maximise specific properties of product performance.
