New tastes to mask soy
Global flavour manufacturer Mastertaste is now offering a full range of soy masking flavours, from mild taste enhancers to products with a stronger masking power. They have all been developed at Mastertaste's research and development centre in Turin.
The mild enhancers are targeted at traditional soy lovers who prefer its characteristic natural flavour profile, whereas the stronger maskers are ideally suited for consumers who prefer the flavour profile of traditional cow's milk.
With European consumers becoming increasingly keen on soya-based alternatives to traditional milk drinks and dairy-based desserts, soya products have experienced double-digit growth, says Mastertaste.
The UK, France and Belgium are now the three main European soy food markets, accounting for 57% of total volume sales in 2006, it says.
