'Tis the season for cranberries, with Christmas just around the corner. And they are a key seasonal ingredient in both sweet and savoury applications, according to Ocean Spray.

The company's Ingredient Technology Group has developed a new easy-to-use format for manufacturers wanting to add cranberries to products - and has launched the ingredient in a purée form.

The 100% fruit purée delivers all the health benefits of the cranberry, according to the company, and can be used in a wide range of applications, such as dairy, bakery and beverages.

Scientific research has revealed that cranberries contain powerful condensed tannins called proanthocyanidins. These are nature's natural agents that help to maintain health by acting on certain harmful bacteria in the body, claims Ocean Spray. Research also suggests cranberries help women maintain a healthy urinary tract.

"The vibrant red colour and rich texture is striking," said Kristen Girard, principal food scientist at Ocean Spray's Ingredient Technology Group. "This colour is maintained throughout processing. As a glaze or filling, the formulation provides cakes and pastries with fruity appeal and the purée's gelling properties make it suitable for fruit preparations."

The tart flavour of the cranberry can also be used in savoury products, added Girard, such as relishes, marinades and salad dressings. "It is a simple yet effective way to innovative with existing recipes," and can add a "modern twist to traditional favourites"

In sweet applications, it can flavour and colour yoghurts and ice-creams, as well as boost fibre content. The fruit purée will be launched at the Health Ingredients Europe exhibition, which takes place in Paris, November 4-6.

Elsewhere, the Wensleydale Creamery, has added 30% more sweetened dried cranberries to its Real Yorkshire Wensleydale. "The fruit's process tolerance and heat stability meant that its incorporation into our cheese-making process was straightforward," said Sandra Bell, marketing manager.

Cadbury recently ran a marketing campaign on its Cranberry & Granola chocolate bar, which helped "strengthen the brand"
