Success in China takes new, 
milder yogurt culture global

Food ingredient and enzyme company Danisco has taken a new milder yogurt culture global after it has shown “tremendous” success in China, the Middle East and North Africa.

The Yo-Mix yogurt culture produces a milder acidification during storage. This means that products made with it maintain a more consistent sensory profile over their shelf-life.

Acidification becomes a significant problem in countries where cold storage and cold chains are less controlled and very often broken. Yogurts could also be distributed at room temperature. However, Danisco claims that, even in averse conditions such as these, products made with a Yo-Mix culture will maintain the same mild flavour at the beginning and end of their shelf-life.

Danisco originally developed Yo-Mix for the Chinese market where its popularity has grown. Danisco developed the Yo-Mix culture by careful strain selection and knowledge of the fermentation process.
