Phosphate-reduced chicken tonight
Three companies (Marigot, AllinAll Ingredients and Naturis) have joined forces to develop a new brine system that offers a clean-label alternative to using phosphates in poultry.

The 'All Natural Brine System' is a blend of 'natural' ingredients formulated to improve yields and enhance taste in poultry meats. These benefits are achieved through increased mineral and binding activity, compared with synthetic alternatives such as sodium phosphate, as well as reduced cook loss.

"Phosphate reduction is a growing issue for meat producers who are under pressure from retailers and consumers to produce more natural products,"​ says Daniel Hickey, AllinAll Ingredients' md.

"As product free from e-numbers, the All Natural Brine System offers the sought-after clean-label declaration, plus the important functional benefits traditionally delivered by phosphates."

The three companies offer complementary expertise, as David O'Leary, commercial manager for Marigot, explains: "The collaboration brings together our formulation knowledge with the market insights and meat sector expertise of our partners. By combining our multi-mineral Aquamin ingredient with the natural components supplied by AllinAll Ingredients and Naturis, we are able to optimise activity within the brine system; providing poultry processors with an added-value, high-performance, all-natural phosphate replacer."

All Natural Brine System will be marketed by AllinAll Ingredients.
