Soya lecithin is the most widely used emulsifier in food production, historically sourced from North America and, more recently, Brazil. However, the increase in GM soy from these countries has meant that big European food companies have looked to India for supplies.
Adani Wilmar has a huge soy production capacity of up to 6,000t a day (crushing) and refining capacity of up to 5,000t a day.
