Stefan Cosser, former senior development chef at Heston Blumenthal’s The Fat Duck restaurant, has become head of innovation at Food Innovation Solutions (FIS).

Cosser joins the food consultancy firm in a bid to “broaden” its creation and delivery of innovative solutions for manufacturers, retailers and restaurants. He has been recruited from Culinary Direction, where he had been independent consultancy chef for the past nine months.

‘Gifted ability’

FIS said Cosser had a “gifted ability” to marry a depth of scientific knowledge with his passion for food, and hoped his expertise would open up a “wealth of opportunity” for brands working with the firm.

FIS md Mike Faers said: “Food is constantly changing. It evolves, delights and challenges us to think in ever more innovative ways; Stefan understands the pace and complexities of the modern food debate and delivers unique solutions that drive meaningful change for organisations.”

Before working at Culinary Direction, Cosser was senior development chef at Heston Blumenthal’s The Fat Duck restaurant in Bray, Berkshire for five years.

He started his career in his native Iceland in 2000.
