Swiss food firm uses potato as natural pink colouring
Swiss food colouring manufacturer, Wild Flavors, is using the purple sweet potato as a natural source of pink and violet food colouring.

Native to Latin America, the purple sweet potato is a climbing plant that is only distantly related to potatoes. It contains anthocyanin, which gives products a pink raspberry colour with no aftertaste or scent, according to Wild Flavors.

The company is using the colour to extend its Colors from Nature range.

In the ingredients list the purple shade is indicated with the number E163 and the name of the colour ‘anthocyanin’. The colour is water soluble and characterised by good heat, light and acid stability.

It is suitable in confectionery products such as hard candies or fruit gums and fruit-flavoured soft drinks.
