Natural range takes flavours down to molecular level
A new natural flavour range that is claimed to offer an “indistinguishable” taste from the original ingredient has been unveiled by Omega Ingredients.

The Signature range can be used in any number of applications, including beverages, baked goods and confectionery, the company said.

Omega claimed to have created flavours that match fruits and aromatics at a molecular level.

Flavours include Wild Strawberry, Ripe Banana, Alphonso Mango and Freshly Picked Garden Pea, while bespoke options are available.

The taste and smell of natural produce

According to the company, the Signature brand apes the taste and smell of natural produce, making it possible to sense the fur of a peach, for example, or taste the freshness in a rosemary flavour that seems like it has just been cut from the shrub.

The Signature range of flavours is the latest new product development from Omega founder Steve Pearce, a biochemist who launched the natural sweetener MegaSweet earlier this year.

MegaSweet can compensate for the taste of sucrose and has no after-taste, Omega said.
