Taste modulator offers flavour-masking benefits

A taste modulator that can mask a wide range of flavours in liquid-based products was unveiled at last November’s Food Ingredients Europe in Frankfurt.

ModuMax can be used in a wide variety of applications: from savoury soups and sauces to sweet beverages and desserts, according to its maker DSM.

Balancing taste is essential when reducing sodium, fat, or sugar, or when adding ingredients with strong off-notes like protein or sweeteners.

ModuMax worked on multiple levels to improve and balance taste, DSM said.

Helps to restore the preferred taste profile

The innovative product rebuilds mouthfeel and helps to restore the preferred taste profile in the applications where taste is a challenge, said Frank Meijer, product application expert at the company.

“For example, in sugar-reduced soy milk, ModuMax improves the creamy mouthfeel of the beverage while reducing the bitterness and astringency of sweeteners and also masking the ‘beany’ flavour,” he explained.

“It is an excellent addition to the formulator’s toolbox.”
