Blueprint for soup production
Stevens Group's Recipe Formulation System is helping ensure batch consistency and traceability at soup manufacturer, Blueprint Foods.
Portsmouth-based Blueprint Foods specialises in the production of high quality fresh chilled soups and sauces for the UK foodservice market.
The fact that all the soups are prepared by hand and require a number of different ingredients can pose difficulties in keeping track of amounts used and in ensuring that correct quantities are added. So Blueprint Foods went for Stevens Group's Recipe Formulation System to provide a complete recipe management, stock control and traceability system.
Recipes for products are entered into the computer via the recipe formulation management software. The system allows management to enter and determine the exact recipe characteristics, including individual ingredient tolerances and how the products are added. The system then calculates the amounts of each ingredient needed and downloads the order to the relevant station.
The system will not allow the operator to continue if the incorrect ingredient is selected or the wrong amount added. It can also produce a range of reports, giving a detailed and instant view of the operation at any given time.
