One to watch: Ruby chocolate
Ruby chocolate entered the food scene in 2018, but it has yet to establish itself in bakery. “Once ruby chocolate is more widely available, we expect to see foodservice professionals experimenting and discovering its true potential,” says Pidy UK commercial manager Fabien Levet. “Its light, creamy texture and hint of berry flavour will lend itself to an array of sweet delights.
